One of the most fun ways to spend time with friends and family is to enjoy a steamboat together. All you will need is a nice pot of stock and whatever toppings you like. Seafood, meat, veggies, and noodles are just a few of the options. Some of these ingredients can be bought from your local frozen food supplier.

There’s nothing as delicious as a pot of hot, simmering soup with a variety of fresh ingredients. Soup stock for steamboat comes in a variety of flavours, but the most basic hot pot series just requires a delicious chicken broth.

How to make your chicken broth?

Ingredients 

  • Bones from 1 chicken
  • 6 cloves of crushed garlic
  • Ginger
  • 1 bunch spring onions
  • 1 chicken stock cube
  • Ground white pepper 
  • Water enough to cover everything

Bring all of the ingredients to a boil, then reduce the heat. Allow for a half-hour to an hour of simmering time. To keep the soup clear, skim off the grey froth (scum) on top with a ladle. The soup will be more flavorful if you use more bones. When it’s done, strain it into your steamboat pot, discarding the bones and vegetables.

Fresh seafood, thinly sliced chicken or beef, assorted vegetables, noodles, wontons, and dipping sauces are usually included in a basic steamboat menu. To have a nice steamboat, you don’t need a lot of variety; just a few good ingredients would suffice. In general, more seafood results in a sweeter broth in the end, whereas meats result in a richer flavour.

Using large chunks of protein that require a long time to cook, such as bone-in chicken and beef, or whole fish, is a major no-no for steamboat. To cook in a minute, the proteins must be boneless and finely sliced.

Seafood platters are simple but delicious. Fish balls are a must-have, and prawns will sweeten the broth. Squid and tenggiri fish slices will cook in less than a minute. If you want to mess about with shells, crabs are an option. There should be no seasoning on any of these. The soy sauce will provide the flavour.

Bringing All Together

Bring the soup (chicken broth) to a boil, then add the other ingredients bit by bit. Vegetables come first, followed by meat, seafood, fish balls, cheese tofu, shishamo, fish bean curd rolls, lobster balls, etc.

Cook the fresh ingredients in batches; it will take an average of 2-3 rounds to use up all of the fresh ingredients.

Slowly scoop up the cooked food and soup with a ladle, eat, and add more to the soup as the ingredients in the pot finish.

You can use soy sauce for the dipping sauce. Cut chillies or chilli oil can be added to the soy sauce if you prefer it spicy.
